Buying meat directly from a farm

There are two common ways to buy. You can buy by the cut from an on-farm store or a farmers market, the same way you would shop a butcher counter. Or you can buy a share of an animal, a quarter, a half or a whole, cut and wrapped to your order and delivered frozen. A share is the cheapest way to fill a freezer with pasture-raised meat, often well below grocery prices per pound.

When you buy a share you usually tell the butcher how you want it broken down: how thick the steaks, how big the roasts, how much ground. The farm handles the rest.

Grass-fed, grass-finished and pastured

Grass-fed means the animal ate grass, but some are still fattened on grain at the end. Grass-finished means pasture from birth to harvest, which many people prefer for flavor and nutrition. For pork and poultry, look for pastured, meaning the animals lived outdoors rather than in confinement. If it matters to you, ask the farm directly how they raise and finish their animals.

Planning a freezer order

A quarter beef is roughly 100 to 150 pounds of packaged meat and fits in a standard chest freezer with room to spare. Split a half or whole with family or friends if you are short on space. Properly wrapped and frozen, the meat keeps a year or more. Use the map above to find farms selling local meat near you.
